In the classic recipe sour cream contains only sour cream and sugar or powdered sugar. There is nothing more to add to it.

- Sugar sand — 1 cup.

All cooking begins 12 hours before it is necessary to coat the honey cake.
Sour cream, purchased in a store with a fat content of 25-30%, is laid out in a pre-prepared structure of a bowl, colander and gauze. We put all this in a refrigerator overnight, either covering it with the same gauze or gauze cloth, or a lid of a suitable size.
In the morning, pour out the whey from the bowl, where we make pancakes or pancakes for breakfast, and put the thick sour cream in the bowl for beating. It is not necessary to take a rustic, very thick sour cream, as when beating with a mixer you can get not a cream, but 0.5 kg. butter.

Honey cake with classic sour cream
Well, since there is a cream recipe, then there simply must be a recipe for the cake itself with such a cream.
What you need to make the most delicious honey cake in the world:
- Honey (preferably light) — 2 tablespoons;
- High-grade flour — 2 glasses;
- 1 chicken egg;
- Sugar — 1 cup;
- Soda — 1 tsp;
- Butter — 1 pack (200 gr.);
Of course the cream that is described above and includes a glass of sugar and 500 ml. sour cream.

To do this, break the egg into a bowl and add sugar, beat it well with a mixer or whisk and begin to report and fill up the rest of the ingredients. First, softened butter will go into the bowl, then you need to mix the honey with soda and send it to the cooked dough too. Mix everything well until smooth.
If the honey is too thick, then it should be slightly heated in a water bath.
Almost all the ingredients were in the bowl, it remains to add only the flour sifted through a sieve. Now everything is exactly. Knead the dough and divide it into five equal parts.
Each part is rolled out with a rolling pin in the cake, the thickness of which should be 1 cm, but not thicker.

Preheat oven to 180 degrees and put cakes one by one.

Then remove the bowl from the bath, cool it and add the eggs, stir and put it again in the bath. Now again it is necessary to achieve a homogeneous mass. It is time for vulcanization — we pour soda in a bowl and mix it in; a beautiful white foam is obtained that will delight you for about 10 minutes.
At this time, you need to constantly stir, without removing from heat. The volcano calmed down, and now we remove the bowl from the bath and add flour.
Knead the dough until it becomes soft, not sticky to the hands and walls and is ready for rolling. If, however, it is liquid, then gradually pour the flour.
After these procedures, send a bowl of dough in the refrigerator for one hour.
We divide the finished mass into equal small pieces and roll out the cakes with a thickness of just under 1 cm. Bake in an oven heated to 180 degrees for about 5 minutes for each cake. We make the impregnation, and collect the cooled cake.
You can lay prunes or nuts.
2-3 cakes should be left for sprinkling, if there are other products for this, then sprinkling is needed only on the sides.
After complete preparation of the cake, send it for 3-4 hours in the fridge — let it soak and get a great taste.
Additions to the cake
If the usual taste of the standard honey cake bored you, then do not be afraid to experiment with the layers and components of the test.
What can be added between the cake or in the dough:
- Prunes or dried apricots, which soak and cut into small pieces and put on the impregnation of each cake;
- You can do the same with raisins, chocolate, or any nuts;
- Cocoa powder will easily shelter the dough, which will not only make the honey cakes dark, but also add chocolate flavor. On a standard cake you need 4 tablespoons of cocoa.
Do not be afraid to decorate pastries of various kinds of additives. It is not necessary to sprinkle it with crumb from all sides; you can only use it on the sides of the cake itself, but decorate the top with nuts and grated chocolate.
