Therefore, no matter what recipe you saw during that wonderful pre-perestroika period, everywhere you could see only dried apricots, prunes, raisins.
In the capital, it was possible to find canned fruit on the shelves, but in the outback there was such a line behind them that it was blasphemous to let them on the fruit cake. These cherished banks were given to children, and only on a holiday.

- 10 eggs;

First, separate the whites from the yolks, then beat the yolks a little and pour the sifted flour into them. Beat whites until thick foam, add sugar in them and then combine with yolks. Here, as always, you must be careful not to destroy the resistant protein mass.
Stir with a wooden spatula. Now we bake in the oven for 20-25 minutes, in an oven preheated to 180 degrees.
Repeat all the actions with the second cake. After baking, cool both parts, and at this time prepare the cream.
Mix condensed milk with softened butter and beat a little.
When the cakes have cooled, it is necessary to soak them with juice, half of the entire norm for the cake.
Then we coat with cream and cover with the second crust.
Peel fruits, cut bananas into slices, at an angle, oranges with thin plastics. Spread the fruit on the cream, creating a drawing, then pour the jelly and send it in the fridge to freeze.
You can decorate the sides of the cake with either a cream syringe cone or sliced fruit.

For him we need:
- Shortbread cookies — 150-160gr .;
- Good quality butter — 100gr .;
- Fruit to your taste — 300 grams;
- Cottage cheese — 400 gr .;
- Yoghurt — 250 gr .;
- Lemon — 1 pc .;
- Protein from chicken eggs — 2 pcs .;
- Instant gelatin — 20 g;
- Sugar — 100 gr.
We start cooking the cake from the base, on which the whole fruit cake will be held.
To do this, shortbread pastry minced or grind in a blender. Then combine it with softened butter.

Distribute the dough along the bottom, a little running onto the sides, and put in the freezer for one hour.

We rub the curd through a sieve or chop it in a blender, then rub the lemon zest on a fine grater and squeeze the juice out of the pulp. Now add lemon zest and yoghurt to cottage cheese, gently whisk. Heat some lemon juice and dissolve the gelatin in it.
Add the juice with gelatin to the curd and mix well.
Mix proteins with a mixer in a strong foam, gradually adding sugar. Then combine cottage cheese with proteins and mix.
At this point, the mixer can not be used, very gently interfere with a regular spoon or spatula.
Fruits cut into small cubes.
We take the base out of the fridge, spread on it a quarter of the cream. Pour fruit salad, about 1/3 of its volume. Then again a quarter of the cream and salad again.
After the last portion of the fruit salad, lay out the remaining cream and put the cake in the fridge to set. It should stand so night, after which we remove the removable rim and shift the cake to the dish.
Paper or film can be removed by acting very carefully, so as not to destroy all the beauty.
The recipe is not as complicated as it seems, but this fruit cake will be very useful for children.

Exotic fruit cake to be prepared from the following ingredients:
- Flour — 3 tbsp .;
- Sugar — 2 tbsp .;
- Vegetable oil — 1.5 tbsp .;
- Bananas — a few;
- Canned pineapples — 1 bank;
- Chicken eggs — 3 pcs .;
- Salt — 1 tsp;
- Soda — 1 tsp;
- Chopped walnuts — 1 tbsp.
- Cream cheese — 225 g .;
- Butter — 100 g;
- Caster sugar — 4 tbsp .;
First you need to prepare all the ingredients so as to add them as needed to the fruit cake.
Pineapples finely chopped, crush bananas in mashed potatoes with a fork, chop the nuts. The recipe does not provide for the exact number of bananas, since we need 2 tbsp. banana puree, but these fruits can be small or very large. Now start the dough mix for the cake layers.
First of all, sift flour and soda, then add salt and sugar. All the dry ingredients are mixed and left to stand.
Now let’s do the liquid part.
Beat eggs slightly, add banana puree, pineapple pieces, walnuts and vegetable oil. Stir to a more or less homogeneous state and add to the dry ingredients.
Stir once again.
In the oven preheated to 180 degrees, we first put the first cake of half the dough and bake for 60 minutes, then do the same with the second one.
While the cakes are cooked and cooled, you need to prepare a cream.
We soften butter and cream cheese by taking them out of the fridge at the moment you start cooking. Mix cheese with butter and powder, achieving a homogeneous consistency.
We coat the cakes and sides of the cake thoroughly, then decorate to taste with nuts and grated chocolate.
Fruit cake ready to eat. The recipe may be a bit complicated, as there is no exact amount of bananas, as well as the step-by-step mixing of dry and liquid products, but the cake is worth the trouble.
