How few holidays

If you count all graduation, which falls to the share of the child, then there are not so many of them — only 5:

  • Graduation from kindergarten;
  • Graduation from primary school;

That’s all the holidays, of course, you can organize additional — the last call, the first time in the first class. And all this is to celebrate with a cake, but with the last call it will be rather difficult, because the final exams and the joy are not complete on the nose, and on September 1 the children do not know each other and rush to the mothers sooner after the call.

The graduation cake should of course be tasty, but its main highlight in the decoration, and not in the recipe of the cakes from which it consists. In any case, if a mother herself wants to make a similar cake, then it is necessary to first interview the children, and for kindergarten and elementary school, their parents for allergies to any products.

Cooking the most common sponge cake. The standard set of products for biscuit is designed for a round shape with a diameter of 20-25 cm.

Accordingly, if the ovens are large biscuits on a baking sheet, then the ingredients for one cake will need some more.

On the standard biscuit should:

  • 4 eggs;
  • 100 gr. flour;
  • 150 gr. Sahara;
  • A teaspoon of vanilla sugar.

For the cake, which closes a baking sheet of 35 * 40 cm in size, you will need to multiply this number of products by 2. The problem is not in the number of cake layers, but in the technology of baking biscuits.

It all starts with the separation of proteins from yolks and whipping them. First, beat all the yolks and a half sugar to white foam, then begin to beat the whites on a low-power mixer, gradually increasing it to maximum.

You should get a dense foam in which a thin stream of falling asleep sugar, without stopping to beat.

Put some protein, about a third of the volume, into the yolks and mix from top to bottom. Add in the yolks the flour, sifted through a sieve, and stir. Next in the yolk mass lay out the remnants of the protein and mix from the bottom up.

As if mixing layers.

It is not worth long to interfere with the dough, as air bubbles are destroyed, which will further give the cake pomp. It is necessary to bake for 30-35 minutes in a preheated oven.

Cooked korzhu need to cool down and rest for 8-12 hours, so that later when cutting into pieces, it does not crumble. At this time, the cakes are left on the table and covered with a towel.

And the second cream is more dense for decoration. Usually for persistent decoration, they make either custard protein cream or oil cream.

Custard protein cream for a standard cake will need:

  • 4 egg whites;
  • A glass of sugar;
  • Half a glass of water;
  • A pinch of salt.

First of all, separate the whites from the yolks. Utensils in which you will prepare the cream should be clean and wiped dry.

Put the whites in the dishes for 10 minutes in the refrigerator.

Pour water into a clean and dry saucepan, add sugar and cook over low heat for 35-40 minutes. While the syrup is boiling, get the whites from the fridge, add salt and start beating with the minimum mixer speed, gradually increasing it to the maximum.

It should be a very thick and voluminous foam of white color.

After boiling the syrup, it is necessary to check it for readiness, pour cold water into a cup and drip a drop of the syrup with a spoon. Water is drained.

There should be a soft ball.

But doing two things at the same time will not work, because you can’t stop whipping squirrels, and only two hands. Let the syrup on the readiness check someone from home.

If the syrup is ready, pour it into proteins in a thin stream (the mixer still works). Here, too, need a second pair of hands. Whip the cream until it reaches room temperature.

The mass will thicken well and from it you can form any decorations on the cake. If you need jewelry of different colors, then you can add a little boiling juice or food coloring to the syrup.

Oil cream for decoration. The basic recipe for a standard cake consists of:

  • High-quality butter — 250 gr .;
  • Sugar — 0.5 kg .;
  • Salt and vanilla on a pinch;
  • Milk — 5-8 tablespoons.

We take the oil out of the refrigerator, remove it from the wrapper and cut it into pieces. Fold the pieces into the dishes in which the cream will be made.

The smaller the pieces of butter, the faster it will soften.

While the butter is melting, we make sugar powder with the help of a home-made coffee grinder. You can use a blender, but the sugar crystals strongly scratch the plastic surfaces of the device, so a coffee grinder is preferable.

Using a mixer, beat the butter to a high-quality white homogeneous mass, then gradually pour sugar, vanilla and salt into it. Continue to beat until the state of elastic homogeneous mass. Next, add the milk.

The amount of milk can be from 5 to 8 tablespoons, depending on how much thick cream you need. We divide the cream into pieces and add to each our own dye, which can be bought in a shop for homemade pastry chefs.

Perhaps this is the basic version of the cake, and then everything depends on your imagination. You can limit yourself to these components, and make a beautiful cake covered in flowers, you can improve it and add more decorations.

Cake decorating

Depending on the age of the graduates, the cake can be arranged in different ways. For older classes, an open book is suitable, for babies — a basket with berries and fruits, but no one has canceled traditional flowers.

Photos of graduates can be ordered in the confectionery, they are made using a special candy bar on rice paper or mastic food dyes. An album or a memorable address will be made for graduates, one has only to ask the photographer for a copy on a flash drive and take it to the workshop. Then carry a photo home, and put on one side of the cake. The second side can be decorated with holiday greetings.

To make a cake in the form of an open book or album, you don’t have to spoil the cake layers, everything is done with the difference in applying the cream. To begin with, the cream is applied in an even layer onto the entire top layer, and then a thin layer in the middle is removed with a thin plastic spatula for pancakes.

It turns out the deepening, as in the disclosure of a thick book. Pages and spine are made using a pastry bag and protein or butter cream on the sides of the cake.

Calculating the size of a holiday treat

How to correctly calculate the size of the surface of a «small cake» we shall understand with a simple example. You need to know how many people will be present at the holiday.

If this is graduation at school, then the number of students must be added teachers and parents who want to attend the celebration. The organizing council of the graduation ball most likely has this information.

Then everything converges to a simple multiplication table — the number of guests is multiplied by the size of a piece of cake. In order for everyone to enjoy the taste, the area of ​​the piece must be from a matchbox, its surface area is 17.5 cm2. Now you need to multiply the number of guests on this standard size.

On average, graduation in school, if you graduate 4 classes, is visited by 180-200 people. Using simple arithmetic, it turns out that the surface of the cake should be 3150 cm2 — 3500 cm2.

This is a pretty big cake. With the standard parameters of baking sheets of 35 * 40 cm. You will need 2.5 layers of cake per cake, therefore, the cake in two layers will have to bake five large cakes.

And as mentioned above, a double volume of ingredients leaves for one cake on a baking sheet, which means that only the cake layers will have to buy the necessary products in a tenfold amount.

But do not be frightened and despair, as at all times it was said: “The eyes are afraid, and the hands are doing.” If you want to please your children, then nothing is impossible.
