A cupcake with candied fruits and dried fruits has been an integral part of the festive Christmas table in Europe for many centuries. You can store it for several days, wrapped in plastic wrap, so you can not be afraid that you will not be able to eat everything at once.

Candied fruits, if they are large enough, can be cut into pieces the size of a raisin. Then, together with raisins and other dried fruits, they should be put in a bowl and pour the selected alcohol or juice for about three to four hours.

If during this time not all the liquid is absorbed, then the residue must be drained. Almonds also need to be prepared — boil for 1-2 minutes in boiling water to peel off. Then chop 50 g of the nut and cut the rest into flat halves.

Butter is whipped with sugar (preferably with a mixer).

Then, continuing to beat, add there one by one egg. Flour is added to the resulting mass (sifted before it), salt, cinnamon, cloves, baking powder.

Mix gently (at this stage it is better to do it manually).

Candied fruits are rolled in a small amount of flour, then they are added and ground nut to the dough. Stir the mass again.

Preparation of the form: oil the walls, sprinkle with a little flour, it is better to put special baking paper on the bottom.

Pour dough into the mold. You need to choose a container so that the liquid mass will fill it by about 2/3, because the volume will increase in the baking process. Candied fruits should not look out of the dough, otherwise they can burn.

Top rows need to lay out the remaining almonds. The oven is turned on 180 degrees, heated and put a cupcake there. Usually it is baked for 1 hour and 15-30 minutes.

This recipe is very easy and fairly quick to prepare. For its preparation, candied fruits are also better soaked in advance for several hours, so that they are more juicy.

  • 1 cup of sugar (in this case, both brown and white will do);
  • 100 g candied fruit and raisins;
  • 2 eggs;
  • 100 g plums oils (pre-soften);
  • 50 ml of rum, brandy or apple or grape juice;
  • 1-2 tbsp. flour (wheat);
  • 1 tsp soda;
  • ½ tbsp. kefir (take a low-fat);
  • 1 pack vanilla sugar.

Time for cooking: 1 hour (not including soaking candied fruit).

Caloric content per 100 g: 285 kcal.

The butter, previously melted, is ground with sugar. Soda is extinguished in kefir, eggs are whipped in a separate container. Then butter, sugar, kefir and eggs are joined together.

All ingredients are mixed until a homogeneous composition. Pour candied fruits and raisins, presoaked in alcohol or juice, add vanillin and stir again.

In the form, the walls of which are greased (it is necessary to fill it with dough not to the end, so that there is room for elevation), bake the product in the oven with an exposed temperature of 180 degrees for about half an hour.

Is the dough ready, checked with a match or a toothpick — if there are no traces of raw dough on them, then the cake is ready.

You can bake several small cupcakes at once, so as not to portion a large product. To do this, it is better to take silicone molds, which can be found in almost any supermarket or in the stores.

In them, the dough is well baked, and then ready-made muffins will be easier to remove.

  • 100 g of candied fruit (you can buy or cook orange candied fruit — then the cupcakes will be with a pleasant citrus sourness);
  • 3 eggs;
  • 150 g plums or any rast. butter (in the first case, it will need to be melted a little before cooking);
  • 1 tsp baking powder (necessary for the pomp and crispness of the dessert);
  • 200 g of cottage cheese (preferably not fat);
  • 200 g of flour and usual or brown, in accordance with the preferences, sugar;
  • ½ tsp vanilla sugar.

The time spent on cooking: 40-50 minutes.

Caloric value for 100 g of a product: 320 kcal.

For cooking dessert, you can also use the slow cooker.

  • 50 g of candied fruits (if desired, they can be kept for several hours in alcohol or apple juice);
  • 50 g of any chopped nuts;
  • 4 eggs;
  • 60 ml of any plant oils (it is not so calorie);
  • 1.5 tsp. baking powder;
  • 270 g sour cream (better to take 10%);
  • 180 g of flour and brown sugar;
  • 1 g of salt and vanilla.

Cooking time: 1 h 45 min.

Caloric content for 100 g: 311 kcal.

In a separate bowl, beat the eggs with sugar and vanilla, then pour the sour cream and pour the salt, beat again. Stirring, gradually pour in the previously sifted flour, baking powder, mix the homogeneous dough.

Add candied fruits and nuts, then pour in the oil and mix again. The dough is placed in a multicooker container, the walls of which need to be oiled.

Cooking a cake on sour cream with candied fruit in a slow cooker takes an hour in the «Baking» mode, and then half an hour in the «Heating» mode. After the slow cooker, the cupcake should cool before use.

Food before cooking is better to get out of the refrigerator in advance, so that all of them are at room temperature. Flour is sieved immediately before adding to the dough to make the product more airy and fluffy.
